This time of year is perfect for no-bake desserts. Being able to whip up this easy no bake lemon pie and store it in the refrigerator until you are ready to serve it is perfect on a hot summer day.

Our weather is finally heating up which means the last thing I want to do is be in the kitchen with a hot oven. The air conditioner is working hard enough I don't want to add to its work load.

Plus no bake pies are the perfect summer dessert. light, refreshing, and oh so delicious!

Ingredients Needed

• Cream Cheese
• Sweetened Condensed Milk
• Lemonade Concentrate
• Cool Whip
• Graham Cracker Pie Crust - Homemade (graham cracker crumbs, melted butter) or store bought
• Fresh lemons for zest

Garnish - Lemon zest, whipped cream, blueberries.

We use lemonade concentrate because we like the flavor it brings to this pie. You can also use freshly squeezed lemon juice and grated lemon peel.

We love the flavor of the graham cracker crust with the lemonade pie but you could switch it up and use a nilla wafer crust, shortbread cookie crust, or even a golden Oreo crust.

Equipment Needed

Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

Pie Pan or Springform Pan

Hand Mixer

Spatula

How to make a Lemon Icebox Pie

You can use a homemade graham cracker pie or a store bought graham cracker pie shell. It really is up to you and how much time you have.

Step 1 - Beat together cream cheese and sweetened condensed milk in a medium bowl until smooth and evenly combined.

We use a hand mixer but you can also use a whisk. A food processor could be used but make sure to watch how it mixes.

Step 2 - Add in lemonade concentrate and mix until combined.

Step 3 - Gently fold in Cool Whip until there are no more streaks.

Step 4 - Pour the lemon pie mixture into a 9-inch pie pan with a graham cracker crust already in it.

If you don't have a pie pan this can be made in a springform pan or a regular pan.

Plan time for the pie to rest in the refrigerator and set before serving.

Optional - Garnish with additional whipped cream, candied lemon slices, or fruit.

Recipe Tips

Make sure to set the cream cheese out at least an hour before you need it so it will be soft and easy to mix with.

You can use fat free cream cheese or full fat cream cheese for this recipe. The flavor will change a bit between the two of them.
