Chinese Pork Fried Rice Recipe » Foodies Terminal (2)
  • Pork: Ground pork or mined pork. If you are using minced pork add 1 tbsp soy sauce and mix well with the minced pork before sauteing the meat. This will enhance the flavor of the dish almost instantly.
  • Aromatics: Yellow onion and garlic. This will boost the flavor.
  • Veggies: Carrots, green peas. You can also add extra veggies like chopped green beans, thawed corn kernels and also diced mushrooms (baby bella or white mushrooms). We did not add these veggies this time.
  • Eggs: The addition of scrambled eggs will make this instant pot pork fried rice recipe irresistibly good!
  • Sauces: Dark soy sauce and low sodium regular soy sauce. You can replace the regular soy sauce with coconut aminos or tamari.
  • Toasted sesame oil: Adding a small amount of toasted sesame oil at the end of cooking enhances the overall aroma and flavor of the fried rice. We mixed the toasted sesame oil in the blend of sauces and added it to the fried rice. You can also sub the toasted sesame oil with chili sesame oil. You can buy them at any Asian supermarket.
  • Cooking fat: Avocado oil or extra light olive oil.
  • Liquid: Water.
  • Optional garnish: Roughly chopped green onion. Use only the green part.

Tips for success

  • Rinse rice: Rinse the rice very well under running tap water by gently rubbing the grains with your fingers until clear water runs through. This will help remove the surface starch from the rice. You will have non-gummy rice every single time.
  • Choose the Right Rice: Use long-grain rice like jasmine or basmati for better separation of grains. Avoid using short-grain or sticky rice, as they can become too gummy.
  • Brown pork:It will boost the overall taste of the dish and add so much more complex flavor.
  • The rice to liquid: Do use the same cup to measure the rice and the water for this recipe.
  • Best fried rice ever: For best authentic flavor add the sauces, thawed green peas and the scrambled eggs at the end (after the pressure cooking cycle is over) and toss everything very well until the rice is well coated with the blend of sauces.
  • Avoid Over-Stirring: While it's important to keep the ingredients moving, avoid excessive stirring to prevent the rice from breaking and becoming mushy.
  • Taste and Adjust: Before serving, taste the fried rice and adjust the seasoning if necessary. You can add a final drizzle of soy sauce or other seasonings to balance the flavors.
  • Instant pot scrambled egg hack:Some more oil and a controlled heat setting in the Instant Pot will make the best ever scrambled eggs that will never stick at the bottom of the pot and make a mess.

Notes

  • Rinse rice: Rinse rice very well to avoid sticky, gummy rice. The surface starch will rinse out and make the rice fluffy and light.
  • More flavor: You can toss the ground pork with 1 tbsp low sodium soy sauce before browning the meat. This will elevate the flavors of the pork. We skipped this step!
  • Gluten free sauce option:Tamari is the best gluten free alternative of light soy sauce.
  • More veggies: You can add diced green beans, thawed corn kernels and even diced baby bella or white mushrooms. Add them along with the diced carrots in a single layer.
  • Spicy pork fried rice: Add about 1-2 tsp red pepper flakes along with the sauces.
  • Can I use Brown Rice?No you can't use brown rice for today's recipe. Brown rice has different cooking time.
  • Soy Sauce contains salt so do add salt carefully in the recipe. Otherwise you'll end up with salty fried rice. We didn't add any extra salt. The sauces provided enough saltiness.
